· 5#-6# brisket lean side (I prefer the fatty side fat has flavor…J)· 1 cup Kosher salt· 1 cup course ground black pepper· Hickory wood

Mix the salt and pepper equally, season the brisket generously on both sides and place in a smoker for, smoke for 10-12 hrs on 225 degrees depending on size of the protein.
