1 Kurkure packet2oz vindaloo roasted vegetables1 oz mango koochumbar½ oz tamarind chutney (store bought)½ oz shredded queso fresco2 lbs. assorted vegetables6 red chilies1 ½ tsp cumin seeds1 tsp peppercorns1 tsp cardamom1 tsp cinnamon1 tsp mustard seeds1 tsp fenugreek seeds1/3 cup white vinegar2 tsp sugar3 yellow onions2 tsp ginger garlic paste1 cup tomato paste Method Brown onions, blend all ingredients other than the Vegetables. Cook the sauce for 30 mins. Toss the vegetables in a little bit of vindaloo sauce. Roast and toss in sauce Mango Koochumbar

Ingredients:1 Mango (green preferably)1/2 cucumbers1/4 jicama1 tsp Jalapeno paste2 curry leaves (finely chopped)1 tsp chopped ginger (finely chopped)1/4 diced red pepper (finely chopped)4 tsp chopped cilantro (finely chopped)1 tsp lime juicesugar to tastesalt to taste

Method: For the Mango slaw- cut the ingredients in brunoise, mix.
