Blackened Mahi Mahi with Tomato Corn Relish for the Mahi4 6 oz portions Mahi Mahi4 T Creole seasoningHeat your oven to 350 degrees. using a large oven safe saute pan, place it on med high until very hot. coat the fish with the creole seasoning, lightly coat the saute pan with oil and then carefully place the fish seasoned side down in the pan. Sear on this side for about 1 to 2 min. Flip the fish over and place the pan with fish in the oven to finish, about 7 to 10 min. (when turned over it should look slightly burnt) for the Tomato Corn Relish3 ears Corn2 medium tomato1 bunch green onion1/2 Tblspn minced garlic1 Tblspn chopped fresh oregano3-4 ea lemons, juiced1/2 Tblspn creole seasoning1/4 c oilGrill or sautee the peel corn on the cob to cook and slightly charr some of the cornels. Remove the corn from the cob, dice the tomato and chop the green onions. Place all the ingredients in a bowl and mix. Best if done a few hours before serving or even the day before. The relish can be heated in a pan if you desire to serve it warm.
