CRAB QUESADILLAS Crab is one of my favorite things to eat. Lump crabmeat can be expensive, so for this I buy claw meat. Because you are putting it inside of the quesadilla, claw meat is perfectly fine to use, and it is inexpensive compared to lump crabmeat! This is wonderful because a little goes a long way!1 (8 ounce) jar crab claw meat ½ cup diced red pepper½ cup diced green pepper½ cup diced yellow pepper½ cup diced red onion1 teaspoon cumin½ teaspoon cayenne pepperdash of Sazón completaolive oil1 ½ cups queso fresco, crumbled1 ½ cups Monterrey Jack cheese, shredded1 jalapeño, finely diced½ cup cilantro, choppedjuice of 1 limebutterflour tortillassour cream for garnishpico de gallo for garnishmango salsa for garnishIn a skillet over medium high heat, add the olive oil. Cook the peppers, onion, cumin, cayenne pepper and sazón completa for about 6 to 7 minutes. Remove from heat and allow to cool.In a separate bowl, combine crab, cheeses, jalapeño, cilantro, lime juice and cooled onion and peppers. Spoon evenly over six tortillas, placing another tortilla on the top of each.On a large skillet (or a griddle) over medium high heat, brush with butter. Place each quesadilla on top and cook for about 5 minutes on each side, or until the cheese is melted. Cut into triangles, and garnish as you desire. (Fresh pico de gallo, guacamole, sour cream, mango salsa, or cilantro lime cream sauce). Serve immediately! HOT CHOCOLATE WITH A TWISTSo sometimes, you don't make homemade hot chocolate. No worries! There are simple, delicious ways to make a mix taste homemade and delicious! Just because you want something quick and easy does not mean you have to sacrifice flavor.For the kids:1 packet of hot chocolate mix2 Tablespoons of flavored creamer (currently, we are using a caramel brownie flavor)boiling water or milk; whichever you prefer (or heavy cream)whipped cream (homemade is best; store bought will work)miniature chocolate chips or shaved chocolate curls.In a coffee mug, stir together the hot chocolate mix and flavored cream. Add boiling water, stirring to combine. Top with whipped cream and miniature chocolate chips or shaved chocolate curls. Enjoy!For the adults:1 packet of hot chocolate mix2 Tablespoons (appx.) Irish Cream (*I personally prefer Carolans or Baileys)boiling water or milk; whichever you prefer (or heavy cream)whipped creamminiature chocolate chipsIn a coffee mug, stir together the hot chocolate mix and Irish cream.
