I recently found some turkey breasts on sale, so I bought several. This is one of the easy and delicious ways I came up with to cook one, and it's perfect as we ease into Cinco de Mayo!

AIMEE FORTNEY'S TEQUILA-CITRUS TURKEY (OR CHICKEN)

Turkey breast (that is about 2.5 to 3 pounds)

For the marinade:

1/4 to 1/3 cup freshly squeezed lime juice (from 2 limes)

1/3 cup orange juice

1/3 cup tequila (I used Familia Camarena)

1/3 cup olive oil

1 teaspoon kosher salt

1 teaspoon black pepper

Cut slits (holes) into the turkey with a sharp knife and place the turkey in a casserole dish. Mix the marinade, then pour over the turkey. Cover with plastic wrap and refrigerate for 30 minutes.

Remove from refrigerator and line a cookie sheet or roasting pan with aluminum foil. Place rack on top of that, then place the turkey breast on top of the rack.

Spoon just a couple of tablespoons of the marinade over the turkey. Cook at 375 for 1.5 hours to 2 hours.
