Mexican Bar snacks - like what you would find to nibble on in a bar or purchase from a street vendor - are easy and healthy to make at home!
AIMEE FORTNEY'S MEXICAN PEANUTS
3 cups unsalted peanutsJuice from one whole lime1/2 teaspoon kosher salt1 teaspoon chili powder1/2 teaspoon cumin
Mix together and place on cookie sheet or pie pan. Bake at 300 for 20 to 25 minutes.
AIMEE FORTNEY'S LIME JICAMA
1 jicama, peeled and sliced into sticks or cubes1 lime1 teaspoon chili powder1/2 teaspoon cayenne pepper
Cover the jicama with the juice of one lime and then add chili powder and cayenne pepper for extra heat. Serve immediately.
