The

sweet apples and pears "pair" really well with the brie cheese!

This is an excellent opportunity to add more spinach to your diet, as

well!

FORTNEY'S FRUIT AND BRIE QUESADILLAS WITH SPINACH

Brie

(softened)

peeled

and sliced apples

peeled

and sliced pears

fresh

baby spinach

flour

tortillas (whatever size you desire; if you use larger ones, you can fold

quesadilla in half, rather than topping with a second tortilla)

mango

jam (heated)

guava

jelly (heated)

In a

skillet over medium heat, lightly spray skillet with cooking spray. On

one side of tortilla, spread brie across tortilla. Next, add slices of

pears and apples, then spinach. Top with tortilla and cook for about 2 to

3 minutes on each side, until the cheese is melted and tortillas are lightly

browned. Cut into triangles with a pizza cutter or knife and serve with

"tropical" flavored jam or jelly that has been heated, for a yummy

"dipping" sauce. (Any flavor of jam or jelly may be used!

Raspberry jam is delicious, too!)
