That Awesome Taco Truck Sweet Potato 'Al Pastor'
Yield: Should make 8 tacos.
Four Large Sweet Potatoes (Washed, Unpeeled, Medium Diced)
That Awesome Taco Truck Al Pastor Dressing
½ Cup Bragg's Apple Cider Vinegar
½ Cup Liquid Smoke
1 Tablespoon Achiote Powder
1 Tablespoon Ground Cumin
1 Tablespoon Ground Coriander
1 Tablespoon Dried Oregano
Mix All These Ingredients Together.
2 Tablespoons Chamoy
4 Collard Leaves
3-4 Ripe Avocados
3 Tablespoons Fresh Lime Juice
6" Corn Tortillas
Canned Pineapple Rings ("Rajas")
1). Place sweet potatoes into pot with generously salted water, bringing to a boil until just fork tender. Strain, set aside for later.
2). Chop collards, discarding stems.
3). Heat 1 tablespoon of olive oil in a cast iron skillet.
4). Add boiled sweet potatoes, collards, chamoy, and kosher salt to hot skillet. Brown.
5). Make salted avocado. Mix ripe avocados, fresh lime juice and kosher salt to taste.
6). When vegetables have caramelized, add a couple of splashes of Al Pastor Dressing.
7). Warm tortillas in another slightly oiled sauté pan/plancha/flat top.
8). Place two warm tortillas on top of each other. Add a tablespoon of salted avocado and the sweet potato mix.
9). Sear canned pineapple rings in the same pan as the sweet potato mix, until caramelized.
10). Top sweet potato mix with caramelized pineapple rings and garnish with sliced radishes and cilantro.
