Mee McCormick's Raspberry Lemonade Keto Muffins

Raspberry Lemonade Keto Muffins (Gf)


1 Cup blanched almond flour (not almond meal)

1/8 teaspoon of baking soda

1/8 teaspoon of sea salt

3 large eggs

¼ cup of grapeseed oil

1 tablespoon lemon zest

1/8 teaspoon of vanilla stevia

1 cup of frozen raspberries

In a food processor, pulse almond flour, baking soda, and salt.  Then pulse in eggs, grapeseed oil, lemon zest, and stevia for about 20 seconds. Remove blade and fold in raspberries by hand. Divide batter between 8 muffin cups and bake 350 degree for 30 minutes. 

Cool and serve
