8th & Roast's Salted Bourbon Pecan Pie

Salted Bourbon Pecan Pie

4 eggs
3 cups brown sugar
2 oz melted butter
1 tsp vanilla extract
2 cups whole pecans
5 tbsp bourbon
1 tbsp cornstarch

-Preheat your oven to 350
-Toss your pecans in a bowl of 2 tbsp of bourbon and 2 tsp coarse sea salt, set aside.
-Beat your eggs before adding any other ingredients
-Break up your brown sugar with your fingers and add to egg mixture while gently folding, never beating.
-Fold in remaining ingredients, including the remaining 3 tbsp of bourbon
-Pour mixture into prepared pie crust or tart pan.
-Arrange whole pecans evenly and carefully and sprinkle salt over the top
-Bake for 40 minutes on middle oven rack
-Let cool at least 2 hours or overnight before cutting
