Mee McCormick's Blueberry Almond Salad

Blueberry Almond Salad
¼ cup of fresh blueberries
¼ cup of rice vinegar
½ tablespoon of honey
¼ cup of olive oil
Dash of sea salt & pepper
Instructions
Combine the ingredient in a blender or food processor and puree until smooth. Season to taste with pepper. You can add a little finely diced jalapeno to it before blending for a sweet heat kick.
Salad Ingredients
6 cups of mixed greens
1½ cups of fresh blueberries
¼ cup of finely sliced red onions
½ cup of almonds
¼ cup of crumbled goat cheese
½ cup of cooked quinoa
2 grilled chicken breasts
In a bowl, combine lettuce, blueberries, red onions, almonds. Slice grilled chicken and add to salad. Crumble goat cheese on top and drizzle with dressing.
* To make this salad vegan skip the goat cheese and chicken and toss in cooked chickpeas  & apple slices - YUMMO!
