Trattoria Il Mulino's Flan Di Mascarpone

Flan Di Mascarpone

8oz. Mascarpone cheese
8 ea. Eggs
14oz. Condensed milk
12oz. Evaporated milk
2 tsp. Vanilla extract

Preheat oven to 350F
Make a light caramel and portion into aluminum cups/pan
Whisk mascarpone in a bowl to soften it
Add eggs one at a time, scraping down the side until smooth
Whisk in condensed milk, evaporated milk & vanilla extract
Once batter is smooth
Portion into cups/pan with caramel
Place in a water bathe
Cover pan with plastic wrap & aluminum
Bake until set around the edge, may still be wobbly in the center
Cool completely before unmolding

Strawberry Basil Coulis

1 pint Strawberries
1 ea. Lemon, juiced
¼ cup Sugar
½ cup Water
6 ea. Basil leaves

Cornstarch Slurry
¼ cup Cornstarch
Enough water to make a thin pourable paste

Combine all ingredients in a sauce pot on medium heat
Stir occasionally
Once strawberries have become soft & pulpy
Take off heat and place in a blender
On high speed liquefy strawberries
Strain into another sauce pot and bring to a boil
Once at a boil whisk in cornstarch slurry
Continue to boil until sauce begins to thicken
Take off heat then place in a metal container and cool down in an ice bath

Mascarpone Crème

1 cup Heavy cream
1 ½ cups Mascarpone cheese
1 tbsp. Vanilla extract
¼ cup Powder sugar
Combine all ingredients except heavy cream in a mixing bowl
Whisk until smooth on low speed
Slowly pour in heavy cream on low speed
Once heavy cream is incorporated switch to medium/high speed
Continue to whisk until you have a thick whipped cream
