Green Door Gourmet's Stewed Strawberries

For 1 gallon of strawberries:
Add 3 tablespoons water to a wide saucepan, then strawberries and 1/2 cup sugar on top.

Over a moderately hot stove, bring the pot to a boil, gently stirring to combine ingredients and soften the berries.

As they cook, the berries will release a lot of liquid and it may seem as they have disappeared!

Turn the heat down to a low simmer and continue to reduce by about 25% until a syrup has formed and there is a "stewed" consistency, around 40-60 minutes.

Do not overstir at any point but to check that the mixture is not sticking to the bottom of the saucepan.

Allow to cool to room temperature before sealing in a container to store in the refrigerator for up to 10 days.

Serve with ice cream, pound cake, bagels, or biscuits!
