Chef Paulette's Walnut & Chocolate Biscotti

Walnut & Chocolate Biscotti

3 eggs

½ cup light olive oil

2/3 cup sugar

2 tablespoons vanilla

1 ½ cups flour

1 teaspoon baking powder

½ cup walnuts, broken into small pieces

½ cup mini chocolate chips

Preheat oven to 375 degrees.

In the bowl of stand mixer, beat the eggs with the paddle attachment until well blended. Add the oil, and beat to combine. Add the sugar & vanilla, beat till combined. In another bowl whisk together the flour and baking powder. Add ½ the flour mixture to the egg mixture, mix till combined. Add the last half of flour mixture. Mix until incorporated. Stir in the walnuts and chocolate chips.

Line 2 sheet pans with parchment. Pour 2 oval mounds of batter onto each sheet pan.

Bake for 20 minutes, or until golden and set. Remove to a cutting board, and cut each log into ½ -inch slices.

Arrange slices, laying flat on one side, in one layer on the parchment lined baking sheet. Bake about 5-6 minutes, remove from oven, flip slices, and return to oven baking 5-7 minutes more.

Cool cookies on rack.

Take it a step further:

If you'd like you can dip one end of the cooled cookies in chocolate. Just melt some chocolate chips, dip cookies, leave to dry. Yum!
