Chef Nick's Dark Chocolate Budino With Espresso Cream

Dark Chocolate Budino With Espresso Cream
6-8 servings


Budino
1 cup    granulated sugar
1/3 cup corn starch
¼ cup  dark cocoa powder
½ tsp espresso powder
1 quart whole milk
8 egg yolks
1 cup dark chocolate chips

Espresso Cream
1 c heavy cream
½ tsp espresso powder
1 tbsp granulated sugar


Whisk together all dry ingredients. Add milk, heavy cream and egg yolks. Whisk over medium heat till thick enough to coat the back of a spoon. Remove from heat and whisk in chocolate chips. Pour into individual serving cups. Cover with plastic wrap and cool to prevent skin from forming, unless you like the skin J
Whisk or beat together cream, espresso powder and sugar till it forms stiff peaks. Top each pudding with a dollop of cream and sprinkle with powdered sugar or cocoa powder.
