360 Bistro's Mussels Recipes

#1: Mussels Mariniere
Ingredients
·    2 T
·    2 cloves garlic, sliced thin
·    1 shallot, minced
·    4 lbs. mussels, cleaned
·    .5 c white wine
·    Juice of 2 lemons
·    1 t toasted ground red pepper flakes
·    .25 lb. unsalted butter, diced
·    Salt to taste
·    Sliced baguette

Directions
1.    Heat olive oil.
2.    Add shallots and garlic and cook 15 seconds.
3.    Add mussels and stir.
4.    Ass white wine, cover and cook until the mussels pop open.
5.    Remove mussels.
6.    Add the butter, lemon, parsley and pepper. Swirl to melt and incorporate the butter.
7.    Add salt to taste.
8.    Serve with baguette on the side.

#2: Mussels Casino
Ingredients
·     1 lb. mussels
·    .25 lb. casino butter*
·    1 c bread crumbs

Directions
1.    Steam mussels and remove from shells.
2.    Clean shells.
3.    Mix mussels with softened casino butter and put them back on the shells.
4.    Top with breadcrumbs and bake at 375 degrees for about 8 minutes, or until golden brown and bubbly.
*Casino Butter
Ingredients
·    1 lb. unsalted butter, softened
·    .75 t salt
·    3 T chives, chopped
·    1/3 c parsley, chopped
·    .25 lb. bacon lardons, cooked
·    Juice of one lemon
·    .5 t red pepper flakes, ground

Directions
1.    Combine all ingredients with a paddle attachment in a food mixer.
