Saint Anejo Cascabel Shrimp Tacos


Strawberry Cascabel Dressing
·    1 Pint- Fresh Strawberries  $4.25
·    1 Cup Cascabel Chiles- Stemmed, seeded  $.40
·    ½ Cup- Honey  .$75
·    ½ Cup- Lime Juice $.20
·    1 Cup- Blended Oil- $.20
·    1 tsp- Kosher Salt $.001
·    1 TBL- Sesame Oil  $.10

Cascabel Salad
·    1 Cup- Chiffonade Romaine
·    1 TBL- Roasted Corn
·    1 TBL- Dry Jack
·    2 tsp- Sunflower seed
·    2 tsp- Pumpkin seed
·    2 tsp- Peanuts
·    1 oz- Cascabel Dressing
Mix all ingredients together in small mixing bowl. Serve on top of tacos

Wasabi Mayo
½ oz Wasabi Powder- $.20
Water as needed
¾ Cup- Mayo- $.20

Blend all ingredients in Dressing recipe except oil in blender, slowly add oil and continue to blend. Label date and refrigerate
Add water to Wasabi Powder until a paste forms, fold in mayo. Labe, date and refrigerate

Grill 9 pcs of shrimp of the flat top until done, Heat 3 tortillas on flat top until hot. Place shrimp inside of tortillas and top with salad. Drizzle wasabi mayo on top of salad and serve.
