Taco Mamacita "Taco Royale"
6 - Warmed, 6-inch flour tortillas
6 - Hard-shelled, 6-inch blue corn tortillas
6 oz - Black Bean Mash - Prepare ahead of time with 1 can black beans and 8 ounces of sour cream
12 ounces - Shredded chicken soaked overnight in verde sauce
Bottle of Chipotle Sauce
6 oz - Fresh Lettuce
Container of Pico de Gallo
Chorizo - Crumble and fry in skillet brown Spanish pork adding to taste garlic, oregano, and/or red pepper. Optionally, this can be made with ground beef as well.
Take a warm, 6-inch flour tortilla . Spread to the edges 1 oz. of black bean mash. Begin layering 1 oz. chicken, chipotle sauce, lettuce, pico de gallo, repeat chipotle sauce and finish with layer of crumbled chorizo. Yields 6 double stacked tacos.
