Jim 'N Nicks Bar-B-Q Brisket
· 5#-6# brisket lean side (I prefer the fatty side fat has flavor…J)
· 1 cup Kosher salt
· 1 cup course ground black pepper
· Hickory wood
Mix the salt and pepper equally, season the brisket generously on both sides and place in a smoker for, smoke for 10-12 hrs on 225 degrees depending on size of the protein.
