Chef Paulette's Zucchini Fritters

Zucchini Fritters

2 medium zucchini
1 small yellow onion
1/4 cup flour
2-3 tablespoons grated parmigiano cheese
2 eggs, beaten
salt & pepper to taste
olive oil for sautéing

Trim the stem end of the zucchini. Grate zucchini on the large holes of a box grater. Peel onion and grate on large holes of box grater. Combine grated zucchini & onion with the flour and cheese. Toss to coat. Add the eggs and combine well. Seasons with salt & pepper.

Heat a thin film of olive oil in a large saute pan. Spoon zucchini batter in small mounds into the oil. Flatten slightly. Cook for about 2 minutes each side until golden. Drain on a paper towel-lined plate. Serve warm or at room temperature w lemony mayo.

Lemony Mayo

1/2 cup mayo
juice of 1/2 lemon
salt & pepper to taste
2 tablespoons minced mint leaves (optional)
