Daily Dish Cafe's Goat Cheese Cakes & Cranberry Vinaigrette

COCONUT ENCRUSTED
GOAT CHEESE CAKES

1/2 pound goat cheese
1/2 pound cream cheese
2 cups panko bread crumbs
1/2 cup shredded coconut
2 TBSP brown sugar
pinch cayenne pepper
1 TBSP salt 1 tsp black pepper
1/2 cup seasoned flour (all
purpose w salt 1 tsp salt and 1/4
tsp pepper)
3 eggs whipped w 1 oz water

mix the goat and cream cheese together by hand until well blended and separate into 1oz cakes

mix next 5 ingredients together
for coconut breading dredge the cakes in the flour then coat with egg then roll in the breading,

refrigerate for 2 hrs

fry in oil at 325 until golden brown

CRANBERRY
VINAIGRETTE

1 cup raspberry puree
1/2 cup red wine vinegar
2 TBSP honey
pinch cayenne , salt , pepper
2 cups blended oil
1/2 cup craisins

place 1st 4 ingredients in an emulsion blender and stream in oil

add craisins, sliced strawberries, sliced mangos, spiced pecans, spring mix
