Chef Nick's Marinated Summer Squash Salad

Marinated Summer Squash Salad
Serves 4-6

2 medium zucchini
2 medium yellow squash
1 garlic clove smashed
3 tbsp fresh lemon juice
3 tbsp extra virgin olive oil
salt and pepper to taste
2 tbsp fresh mint and parsley finely chopped

With a potato peeler slice squash as thinly as possible. Sprinkle with salt and let sit for 30 minutes. Rinse and drain on paper towels. Mix together oil and lemon juice. Season with salt and pepper. Toss with squash, cover and refrigerate for four to six hours. Add fresh herbs, toss together, check seasoning and serve.
Squash can be made a day ahead and tossed with herbs right before serving.
