Chef Paulette's Easy Sausage & Peppers

2-3 green and/or red bell peppers

1 large onion

6 Italian sausages

drizzle of olive oil

salt & pepper to taste

Preheat oven to 400 degrees F.

Line a sheet pan/baking pan with foil. Drizzle a little olive oil. Remove the stems and seeds from the peppers. Slice into 1/4-inch or 1/2-inch strips. Peel onion and slice into 1/4-inch or 1/2-inch strips. Toss peppers & onions with the oil. Cut each sausage into 4 pieces, add to the vegetables. Spread everything out in one layer. Drizzle a little olive oil and season with salt & pepper. Roast for about 40-45 minutes. Halfway through cooking, turn sausages to brown on other side.
