Chef Nick's Baby Spinach Asparagus Strawberry Salad

Baby Spinach Asparagus Strawberry Salad

8 ounces baby spinach
½ pound asparagus, rinsed, ends trimmed
2 tbsp balsamic vinegar
8 ounces strawberries hulled and sliced
3 tbsp extra virgin olive oil
¼ ounce ricotta salata cheese
salt and pepper to taste


Heat oven to 425 degrees. Toss asparagus in olive oil, season with salt and pepper. Roast in oven 10 minutes till just beginning to brown. Slice cooked asparagus into bite sized pieces. Drain olive oil into mixing bowl and toss asparagus with spinach. Arrange on plate and top with strawberries. Drizzle balsamic vinegar on top and season with salt and pepper. Shave ricotta salata on top and serve.
