Blueberry Coconut Morning Porridge
· 1/4 cup gluten-free rolled oats
· 2 tablespoons chia seeds
· 2 teaspoons unsweetened coconut flakes
· 1/3 cup organic blueberries
· 1/8 teaspoon cinnamon
· 1/8 teaspoon sea salt
· 1/4 teaspoon almond extract
· 1/2 generous cup coconut milk
· almond butter for topping preferably organic and raw
· 1 tablespoon hemp seeds
In a small bowl, combine ingredients from oats to coconut milk, in the order listed. Whisk to incorporate.
Cover bowl with saran or tin foil and refrigerate overnight. In the morning, top with a hefty scoop of almond butter and hemp seeds dig in!
