2 cups fresh or frozen organic strawberries (to puree)
1 cup of fresh organic strawberries (to slice & serve on salad)
2 tablespoons honey or coconut nectar
2 tablespoons rice vinegar or apple cider vinegar
2 tablespoons olive oil
1/4 teaspoon sea salt
1/4 teaspoon ground black pepper
¼ cup of crumbled goat cheese
¼ cup of chopped fresh mint
6 cups of fresh organic spinach
¼ cup of pine nuts or sunflower seeds (perfect swap for nut allergies)
Place all vinaigrette ingredients in food processor or blender. Blend until creamy and smooth.
Combine salad ingredients and toss with dressing topping your salad with fresh strawberries! This is delish!
