Chef Paulette's Italian Baci (Kiss) Cookies

Italian Baci (Kiss) Cookies

1 cup almond flour or almond meal
1 cup flour
1/2 cup sugar
pinch salt
1 stick butter (8 tablespoons), cold
2 ounces bittersweet chocolate chips
1/4 cup powdered sugar

Preheat oven to 325 degrees F.

Place the almond flour, flour, and salt in the bowl of a food processor. Pulse to mix well. Cut the butter into chunks and add to processor. Pulse until big curds of dough form. On a clean surface knead dough into a ball, then divide into four pieces and shape each piece into a disk. Wrap each piece in plastic and refrigerate for about 2 hours or overnight.

Unwrap one piece of dough, leaving the others in the fridge. Cut into 4 thick slices. Cut each slice into 4 or 5 pieces. Shape each small piece into a ball, about 3/4-inch around. Place balls on a parchment-lined sheet/baking pan. Repeat with rest of dough (you will need 2 pans). Bake for about 15 minutes until very slightly golden. Let cookies cool completely.

Melt the chocolate and stir until smooth. Place dab of chocolate at the bottom of a cookie and create a sandwich with another cookie (bottom to bottom). Let set until hardened. Dust with powdered sugar.
