Rachel Holder's One Pot Taco Skillet

One Pot Taco Skillet

1 lb lean ground beef or ground turkey
1 (16oz) can fat free refried beans
1 (16oz) jar of mild salsa
1 package low sodium taco seasoning mix
2½ cups tortilla chips (lightly broken in small pieces, not crushed)
1 cup Cheddar or Monterrey Jack cheese
1 cup shredded lettuce
green onions for garnish 

In a medium skillet, cook ground beef until thoroughly cooked. Drain.
Stir in salsa, taco seasoning, and refried beans, mix well and stir often over low heat.
Place 2 cups of crushed chips into the bottom of prepared skillet. Layer shredded lettuce on top. Cover evenly with beef and bean mixture and top with cheese and green onions.
