Ham & Cheese Maple Griddle Sandwich

1 package Smithfield Anytime Favorites Maple Premium Quarter Boneless Sliced Ham
1 cup pancake mix
3/4 cup water
1/3 tablespoon maple crystals or maple sugar
5 slices American cheese
Combine the pancake mix and water. Mix well until the batter is smooth with no lumps. Add the maple crystals or maple sugar and gently swirl in. If using maple crystals, don't mix too much as you don't want the crystals to dissolve.
Place a 3-inch ring mold on the griddle and fill it with 1/8 of a cup (2 tablespoons) of batter. Once the pancake has set and is bubbling, flip it over to finish cooking.
Cut the ham into 3 inch round slices. Stack one slice of ham on a pancake and top with one slice of cheese and a second pancake.
