Chef Paulette's Mini-Frittatas 9/15/15

Mini-Frittatas

6 eggs
2 scallions, sliced thinly
1/3 cup minced ham
1 cup spinach, chopped
1/2 cup heavy cream (or half & half)
1/4 grated cheese (parmigiano or pecorino)
2 tablespoons butter

Preheat oven 375 degrees F.

In medium mixing bowl, whisk the eggs together with a fork. Add the scallions, ham, and spinach, whisk together. Add the cream and cheese, season with salt & pepper, whisk until combined.

Melt the butter in a small skillet. Brush butter on the bottom and sides of the cups of a medium-sized cupcake tin (recipe will fill 12 medium-sized cups). Pour egg mixture into cups until each cup is filled.

Bake for 20 minutes until mini-frittatas are puffed and golden around the edges. Loosen from cups with a small knife. Serve warm or at room temperature with your favorite condiment: ketchup, mayo, hot sauce.
