Chef Nick's Tomato Goat Cheese Stacks

Tomato Goat Cheese Stacks
Serves 2-4

4 Slices of day old crusty bread
4 Heirloom tomatoes assorted colors
½ Cup goat cheese
¼ Cup extra virgin olive oil
1 clove garlic peeled
10-12 fresh basil leaves
1/3 Cup balsamic vinegar
1 tblsp sea salt

Preheat oven to 425 degrees. With a pastry cutter or rocks glass cut bread into circles. Brush with olive oil and bake in oven till golden brown. Remove from oven and while still warm rub with garlic clove. Slice tomatoes into ¼ inch slices and season with a pinch of sea salt. Place one toast round on plate. Top with some goat cheese, a tomato and one basil leaf. Continue stacking about three tomato slices high. Finish with basil leaf on top. Drizzle olive oil and vinegar around stack on each plate and serve.
