Chef Nick's Fettuccine Alfredo With Hot Sausage 8/18/15

Fettuccine Alfredo With Hot Sausage
Serves 4-6

4-5 Links hot Italian sausage removed from casings
1 pound fettuccine pasta
2 cups heavy cream
1 cup grated parmesan cheese
1 cup grated pecorino romano cheese
2 garlic cloves smashed
¼ stick unsalted butter
salt and pepper to taste

Bring a large pot of salted water to boil. Add pasta and cook 8-10 minutes till al dente. Preheat oven to 425 degrees. Place sausage on sheet pan and cook 10 minutes till browned. Remove sausage and break into bite sized pieces. Set onto a plate lined with paper towels to remove most of the oil. In a large saucepan melt butter, add garlic and sauté for one minute till fragrant. Add cream and reduce. Add cheeses and cook till thickened. Add sausage and cook for another minute. Add pasta and combine. Season with salt and pepper to taste. Serve immediately with more grated cheese.
