Grilled Peaches With Cannoli Cream
Serves 6
1 cup ricotta cheese
3 firm peaches halved and pitted
2 tbsp olive oil
3 tbsp brown sugar
½ tsp cinnamon
2 tbsp granulated sugar
3 tbsp honey
1 tsp sea salt
Preheat grill pan or gas grill till smoking. Brush peaches with olive oil, sprinkle with salt and brown sugar. Set aside for a few minutes while you make cannoli cream. In a food processor combine ricotta, cinnamon and granulated sugar till smooth. Place peaches cut side down on grill till seared with grill marks. Remove from grill and fill cavity where pit was with cannoli cream. Drizzle with honey and serve immediately!
