Chef Paulette's Asparagus Wrapped in Prosciutto w Crispy Breadcrumbs

Asparagus Wrapped in Prosciutto w Crispy Breadcrumbs

1 lb. asparagus, woody ends snapped off

2-3 tablespoons olive oil, plus more for breadcrumbs

salt & pepper to taste

1/2 cup breadcrumbs or Panko

zest of 2 lemons

handful parsley leaves, minced

1/4 cup grated parmigiano

1/4 lb. prosciutto, thinly sliced

Preheat oven to 375 degrees F.

Line a sheet pan with some foil. Drizzle a little olive oil. Add the asparagus and gently coat with the oil. Season with salt & pepper. Roast in the oven for about 10 minutes until done (alternatively you can grill the asparagus by placing a pan or cast iron skillet on the grill).

Meanwhile add a little olive oil to a small skillet and cook the breadcrumb until it toasts to a golden color. Re-move breadcrumb to a medium mixing bowl. Add the lemon zest, parsley and parmigiano. Season lightly with salt and pepper and stir to combine well.

Wrap each asparagus in a slice of prosciutto and lay them out on a platter. Sprinkle with flavored bread-crumbs.
