One Pot Basil Chicken Stir Fry
Quick, easy and healthy weeknight meal that's ready in 20 minutes!
2 large chicken breasts (or 4 thighs), cut into smaller pieces
3 carrots, cut into strips
1 head of broccoli, florets only
1/2 cup fresh basil leaves, loosely packed
Cracked black pepper to taste
2 TBSP Bragg's Liquid Aminos
2 TBSP Fresh squeezed orange juice
2 TBSP Sesame oil
1 TBSP Red wine vinegar
1 tsp garlic
Pinch crushed red pepper
Saute chicken with black pepper in hot skillet or wok over medium high heat until almost cooked through.
While chicken is cooking, combine all sauce ingredients and whisk together, and set aside. Steam broccoli and carrots in microwave steamer bag.
When chicken is almost done, add 1/2 sauce to pan.
Add broccoli and carrots and saute until well coated and veggies are semi-soft.
Lastly, add basil leaves and allow to wilt.
Serve immediately with remainder of sauce. Can plate over brown rice or quinoa if desired.
