Chef Nick's Grilled Pork Chops with Lemon Caper Sauce 5/19/15

 Grilled Pork Chops with Lemon Caper Sauce
Serves 4

4 Thick center cut pork chops
1 Bay leaf
1 Tablespoon sea salt
1 Tablespoon fresh ground black pepper
1 Tablespoon brown sugar
2 Cups water
2 Tablespoons olive oil
¼ Cup dry white wine
¼ Cup lemon juice
¼ Cup unsalted butter
2 Tablespoons capers
1/4 Cup fresh parsley leaves roughly chopped


Place pork, bay leaf, salt, pepper, sugar and water in a heavy duty freezer bag. Remove as much air as possible from bag, seal and set in fridge for at least 4 hours or overnight. Pre heat grill or grill pan. Add white wine and lemon juice to a skillet over medium heat. Reduce by half. While sauce is reducing grill pork till done, about 5 minutes per side.  Remove from grill and let rest. Add butter to sauce stirring until completely melted. Remove from heat add capers and parsley. Spoon over pork chops and serve.
