 Trattoria II Mulino Meatballs

6 small onions (Very fine dice)
4 oz. blended olive oil
5# ground veal
5# ground beef
5# ground pork
1# grated parmesan
3 oz. chopped garlic
1 Bunch Italian parsley chopped finely
7 eggs
3# ricotta
3 oz. salt
1 Tbsp. white pepper
2# panko


1st cook onions in oil until lightly caramelized. Place meats, sautéed onions, parmesan, garlic, parsley, eggs, ricotta, salt & pepper in 30 qt. mixer with paddle attachment on low speed. Mix until well combined then add panko and mix just enough to fully incorporate. Form meatballs into 3.5 oz portions, then roll each meatball, coating in olive oil and place on an oiled sheet pan. Bake at 350 degrees F. for 20 minutes, then cool.
