Chef Jamie's Citrus Creme & Fresh Fruit 5/5/15

Fruit Salad with Citrus Crème

Assorted seasonal fruit – at least 1 lb., thoroughly washed!!!!

1 – 32 ounce + / - Greek yogurt, Plain or Vanilla

½ - cup Mascarpone cheese – 1 container, softened at room temperature

1 – TBS vanilla

2 – TBS Orange zest – about 1 medium orange

1 – TBS Lemon zest – about 1 large lemon

½ - tsp. Lime zest – about 1 average lime

3 – TBS Honey

1 – TBS fresh mint, finely chopped

3 - TBS Heavy cream – optional

1.      Combine all ingredients, except fruit in large mixing bowl.

2.      Whisk (or use hand held mixer) to thoroughly combine.

3.      Allow to stand at room temperature for at least 1 hour for flavors to “meld”.

4.      Mix fruit with Citrus crème – or alternatively serve fruit with crème on side.
