Chef Nick's Simple Tomato Sauce 4/28/15

 Simple Tomato Sauce
Serves 4-6

½ Cup extra virgin olive oil
1 Medium onion diced
4 Cloves of garlic smashed
2 32 Ounce cans of crushed San Marzano tomatoes
1 tablespoon brown sugar
4-6 Fresh basil leaves torn
1 tsp dried organo
Salt and pepper to taste

Heat a medium saucepot over medium high heat. Add olive oil and onions. Let the onions sauté for a minute or two then add garlic. Garlic will cook faster than onions and you don't want it to burn. Reduce heat to medium low. When onions are translucent and the garlic is beginning to brown add tomatoes, herbs, sugar, salt and pepper. Let sauce simmer for at least an hour. Check for seasoning and sue for pasta or any other dish that calls for tomato sauce. You can add meatballs and sausage and let cook for another few hours for traditional Italian American Sunday gravy!
