Aimee Fortney's Roasted Spanish Shrimp

I have always said that I love tapas because you can eat a lot of small plates! Well, here's my take on Spanish Roasted Shrimp - a delicious, tapas dish that you can prepare and make in 20 minutes or less.

  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon red pepper flakes
  • 1 teaspoon freshly cracked black pepper
  • Juice from 1 lime
  • Zest from 1 lime

Preheat oven to 400. In a bowl, combine shrimp, olive oil, red pepper flakes, black pepper, lime juice and lime zest. Toss well to coat, then spread out on an aluminum foil lined cookie sheet. Roast for 8 to 10 minutes or until the shrimp turn pink. Serve with fresh lime juice and avocado. Enjoy!
