Aimee Fortney's granola parfaits to go

Granola parfaits on the go, not from the drive thru!

  • 1 cup lowfat Greek yogurt
  • 1 Tablespoon honey
  • 1/2 teaspoon almond or coconut extract

In a bowl, combine yogurt, honey and extract. Stir well to combine.

In small, plastic cups (I use 9 ounce cups) place fresh fruit on the bottom. (Use anything you have. Orange segments work great, sliced bananas, strawberries, raspberries, blueberries, kiwi, mango - anything you enjoy! Next add the yogurt mixture, then top with granola.


  • 1 teaspoon vanilla
  • 2 1/2 cups oatmeal
  • 1/3 cup honey
  • 1 Tablespoon melted butter
  • 1/4 cup coconut oil
  • 1/4 cup of brown sugar
  • 1 cup of chopped walnuts or pecans
  • 1 cup quartered dried cranberries
  • 1 teaspoon cinnamon
  • 1 cup dried cranberries
  • handful of shredded coconut

Mix all ingredients in one large mixing bowl. Spray a cookie sheet with cooking spray and pour the mixture onto the cookie sheet. Bake at 350 degrees for 10 minutes and stir well. Continue baking for 10-15 more minutes. Store in an airtight container.
