Don't order out, or take out ... take in! This chicken stir fry is so healthy and so easy, you're going to love it!
Heat coconut oil in a skillet. Add the chicken and red onion and cook for about 4 to 5 minutes.
Right before the chicken is cooked through, add the rest of the vegetables to the pan.
In a small bowl, heat the peanut butter in your microwave just to loosen it for about 15 to 20 seconds. Add the soy sauce and ginger to this mixture, then pour it into the pan and stir everything together to coat.
Next, add the hot sauce. Serve over a bed of rice and top with sesame seeds. Enjoy!
