Aimee Fortney's Coconut Sweet Potatoes

Coconut Sweet Potatoes for Easter! I have lightened up the old-fashioned way of making this dish, and the coconut is a delicious combination for the sweet potatoes.

  • 5 sweet potatoes, baked
  • 1/2 cup coconut milk
  • 2 eggs, beaten
  • 1 teaspoon vanilla
  • 1/2 teaspoon coconut extract
  • 1 tablespoon brown sugar
  • 3 tablespoons flour (gluten free option is ground oatmeal)

In the dish you will bake this in, lightly spray with cooking spray, then mix all together. 

If desired, top with coconut crumb topping or marshmallows. Bake at 350 for 35 to 40 minutes.
