Aimee Fortney's Taco Bar

A fun and easy way to throw a party and feed a crowd is to set up a taco bar. In honor of our friend, Kimberly Curth, we're doing just that.

AIMEE FORTNEY'S TURKEY TACOS

• 1.5 pounds ground turkey
• 1 tablespoon Aimee's Mexican Spice Blend (recipe below)

Cook ground turkey in a non-stick skillet you have sprayed with cooking spray. Add Mexican Spice Blend and stir well to coat all of the turkey. Set aside.

Assemble your taco bar with bowls of the following:

• Blender Salsa
• Guacamole
• Cilantro-Lime Cream Sauce
• Grated cheese
• Shredded lettuce
• Shredded purple cabbage

AIMEE FORTNEY'S BLENDER SALSA

• 2 cans tomatoes with chiles
• 1 onion
• 1 bunch cilantro
• Juice from one lime

Place all ingredients in blender, then puree. Store in airtight container or mason jar in the refrigerator.

AIMEE FORTNEY'S MEXICAN SPICE BLEND

• 1 tablespoon dried oregano
• 1 tablespoon cumin
• 1 tablespoon chili powder
• 1 teaspoon paprika
• 1 teaspoon cayenne pepper
• 1/2 to 1 teaspoon onion powder
• 1 teaspoon cracked black pepper

Mix all in an air-tight container and keep in a cool, dry place.

AIMEE FORTNEY'S CILANTRO-LIME CREAM SAUCE

• 1 cup Greek yogurt or low-fat sour cream
• 1/2 cup cilantro, chopped
• 1 lime, juiced and zested
• Salt and pepper to taste
