Aimee Fortney's Spicy Cheeseburger Pockets

While it can be tempting to pick up frozen food items, once you read the label of ingredients and preservatives you will quickly remember why it is so unhealthy! These spicy cheeseburger pockets are so easy to make and much better for you!

  • 1 package Puff Pastry
  • 1 teaspoon olive oil
  • 1 small onion, sliced
  • 1 pound ground turkey
  • 1 egg, beaten (optional)
  • 1 tablespoon Aimee's Mexican spice blend (recipe below)
  • Spicy cheese of your choice
  • Mushrooms (optional)
  • 1 egg, beaten for egg wash

Preheat oven to 400. Place the puff pastry on your counter and allow to thaw. In a small skillet, heat olive oil. Now, place the onion slices in the skillet and allow them to cook until caramelized for about 20 minutes. 

Mix the ground turkey, egg and seasonings, then form into about 4 or 5 small patties. 

Cook turkey burgers with Belize or Mexican Spice Blend - just for 4 to 5 minutes - then flip and cook 2 minutes more and add hot habanero or any spicy cheese to the top. (You can also add cheese to the center of your burgers.) 

Once cheese has melted, set aside on a paper towel to drain any excess liquid. You want these burgers just a bit undercooked, so they do not dry out in the oven. 

Place the cooked burger on one side of the puff pastry, then top with mushrooms and caramelized onion. Wrap the pastry all around the burger. Do this for all of the burgers. 

Brush with egg wash, then place these pockets on your cookie sheet, seam side down, and bake for 15 minutes or until golden brown.

You can add cooked bacon, jalapeƱos or any of your other favorite burger toppings to these. Just add to the burger before wrapping in the puff pastry.

Recipe for Aimee's Mexican spice blend:

  • 1 tablespoon dried oregano
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1/2 to 1 teaspoon onion powder
  • 1 teaspoon cracked black pepper

Mix all ingredients together in an air-tight container or zip-top bag. Use, as needed. You can easily double, triple or quadruple this recipe to keep on hand. You control all of the sodium.
