Chef Nick's Shrimp Scampi

Shrimp Scampi

Serves 4-6

1 ½ Pounds jumbo shrimp peeled and deveined

3 Tablespoons unsalted butter

4 Garlic cloves smashed

¼ Cup dry white wine

2 Tablespoons fresh lemon juice

2 Tablespoons flat leaf Italian parsley chopped

1 Teaspoon lemon zest

1 Teaspoon seasoned breadcrumbs

Salt and pepper to taste

Arrange shrimp on platter and pat dry with a paper towel. Season with salt and pepper. Heat a large skillet over medium heat. Add 2 tablespoons of butter to skillet to melt. Once butter is melted, turn heat to high and add shrimp to pan. Cook for about 1 minute. Add garlic to pan and turn shrimp. Cook for about 1 more minute. Add white wine and lemon juice. Scrape the bottom of the pan to remove any brown bits and let cook for about 30 seconds till slightly thickened. Stir in zest, parsley and remaining butter. Transfer to serving platter and garnish with seasoned breadcrumbs.
