Chef Nick's Pork Chops w/ Vinegar Peppers

Pork Chops with Vinegar Peppers

Serves 4

4 Center cut pork chops

8 Ounces sweet red cherry peppers in vinegar

5 Pealed whole garlic cloves

¼ Cup olive oil

½ Cup dry white wine

¼ cup vinegar from pepper jar

Salt and pepper to taste

Cut the cherry peppers in half and remove seeds.Heat a large skillet over high heat. Add olive oil and let heat for a minute. Add garlic cloves and pork chops to pan. Saute on each side till nicely browned, about 5-7 minutes. Add wine, vinegar and cherry peppers to pan. Reduce heat to medium and cook a few more minutes till sauce is reduced slightly. Transfer chops to serving platter and top with peppers and sauce. You can mix in hot cherry peppers if you like it a little spicy!
