Aimee Fortney's Spicy Beer Cheese Dip

If you are hosting or attending a Super Bowl party, or even if you just want the good food for yourself, this Spicy Beer Cheese Dip does the trick!


  • 3 tablespoons unsalted butter
  • 3 tablespoons flour
  • 12 to 16 ounces of a good quality beer (I use my favorite; Cool Springs Brewery, IPA)
  • 3/4 cup milk
  • 3 1/2 to 4 tablespoons hot sauce (I used Boggs Hot Sauce)
  • Black pepper to taste
  • 2 cups of your favorite, good cheese, grated (I used Cabot Seriously Sharp)

In a medium sized sauce pan, melt the butter and whisk in the flour. Cook this mixture, continuing to whisk, for 3 minutes. Slowly pour in the beer, and continue to whisk for another 3 minutes. Now add the milk and bring to a boil, whisking a few times, but not constantly. Once boiling, turn the heat down and allow to simmer until you have reached your desired consistency; which should only take a couple of minutes. Now add the hot sauce and black pepper. Remove from heat, and add the cheese in handfuls, whisking to melt the cheese, each time. You can keep this warm in a small crock pot on low, or just return to the stove to reheat. Serve with tortilla chips, pita chips, vegetables or bread!
