Chef Nick's Turkey Meatball Sliders

Turkey Meatball Sliders

Makes 12

1 pound ground turkey

2 cups stale bread crusts removed and roughly torn

1 cups grated pecorino romano cheese

5 medium cloves of garlic minced

½ cup milk

2 eggs

½ cup chopped fresh parsley

salt and pepper to taste

12 slider rolls.

Preheat oven to 425 degrees. Soak bread in milk for a few minutes till absorbed. Add turkey, cheese, eggs, parsley, minced garlic, salt and pepper to a large mixing bowl. Squeeze liquid from bread and add to bowl. With your hands mix all ingredients together till combined. Mixture will be very wet. With your hands or an ice cream scoop form mixture into balls and gently place on a greased sheet pan. Once all meatballs are formed, place sheet pan in oven and bake for 15 minutes till just starting to brown. Once meatballs are done add to a simmering pot of your favorite tomato sauce. Let them sit in sauce on very low heat for at least 30 minutes. Slice slider rolls, spoon a little sauce on each and add a meatball. Top with fresh grated cheese and enjoy!
