Oatmeal Raisin Cookie:
Citrus Vanilla Greek Yogurt with Macerated Berries
Start with Macerated Berries. Combine all ingredients and let sit refrigerated for 2 hours.
6 C Mixed Fresh Berries—About 2 Pounds
¾ C Sugar
Juice and Zest of ½ Orange
Juice and Zest of ½ Lemon
Citrus Vanilla Greek Yogurt:
2 C Plain Greek Yogurt
Zest of 1 Orange and ¼ Lemon
1 t. Good Vanilla Extract
½ C Powder Sugar
Combine all ingredients and reserve.
Break up Christie Cookie Oatmeal Raisin cookies into pieces. Layer cookie pieces, Greek yogurt, then Macerated Berries into individual serving containers or trifle dish. Repeat layering with remaining ingredients.
